The definition of “hosting” doesn't describe a particular service, but a number of services that provide a variety of functions to a domain address. Having a website and emails, for example, are two independent services despite the fact that in the general case they come together, so most of the people consider them as one single service. Actually, every single domain has a several DNS records called A and MX, which show the server that deals with each specific service - the first one is a numeric IP address, which specifies where the website for the domain is loaded from, while the latter is an alphanumeric string, which shows the server that handles the emails for the domain address. For example, an A record is 123.123.123.123 and an MX record is mx1.domain.com. Each time you open a website or send an email, the global DNS servers are contacted to check the name servers that a domain address has and the traffic/message is first directed to that company. If you have custom records on their end, the browser request or the email will then be sent to the correct server. The idea behind working with separate records is that the two services use different web protocols and you could have your website hosted by one provider and the e-mail messages by another.

Also you can set different latency for these records and the lower the latency, the higher the priority a given MX record will have. The propagation of each record that you modify or create will not take more than several hours and if necessary, you'll also be able to set the so-called Time-To-Live value, which reveals how long a record will stay active after it is modified or deleted.
